Chili Roasted Carrots!

Ingredients

This deliciously simple and well spiced dish is from Jessi's Kitchen. It is gluten free, vegan, paleo and vegetarian. A home-run, whole food recipe!

  • 1lb carrots
  • 1/2 tsp chili powder
  • 1/2 tsp ancho chili powder
  • 1/4 tsp cumin
  • 1/4 tsp oregano
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1/4 tsp garlic
  • 1 Tbsp Dijon
  • 2 Tbsp olive oil
  • 1-2 Tbsp fresh cilantro, chopped (optional)

Directions

  • Preheat oven to 425 degrees.
  • Cut the carrots diagonally.
  • Mix all the other ingredients except cilantro together in a bowl.
  • Coat the carrots with the mixture you just made.
  • Roast the carrots for 15 minutes. Flip and roast for another 15 minutes. The carrots will be soft and a little caramelized!
  • Garnish with cilantro.
  • Yum yum!
