Ingredients
This deliciously simple and well spiced dish is from Jessi's Kitchen. It is gluten free, vegan, paleo and vegetarian. A home-run, whole food recipe!
- 1lb carrots
- 1/2 tsp chili powder
- 1/2 tsp ancho chili powder
- 1/4 tsp cumin
- 1/4 tsp oregano
- 1/4 tsp pepper
- 1/4 tsp salt
- 1/4 tsp garlic
- 1 Tbsp Dijon
- 2 Tbsp olive oil
- 1-2 Tbsp fresh cilantro, chopped (optional)
Directions

- Preheat oven to 425 degrees.
- Cut the carrots diagonally.
- Mix all the other ingredients except cilantro together in a bowl.
- Coat the carrots with the mixture you just made.
- Roast the carrots for 15 minutes. Flip and roast for another 15 minutes. The carrots will be soft and a little caramelized!
- Garnish with cilantro.
